You can serve this quick and simple entree’ of pan-seared salmon with lime dressing over a bed of greens for an even-bigger nutritional boost.

Ingredients
- (2) 3-ounce pieces wild-caught Alaskan salmon fillets
- 1/2 teaspoon sea salt
- 1 twist freshly ground black pepper
- 2 tablespoons coconut oil
- 1 large avocado (pit removed and sliced)
- 1/2 cup organic cherry tomatoes (halved)
- 1/4 cup watercress sprigs
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons yellow or green onion (finely minced)
- 2 tablespoons fresh cilantro (chopped)
- 1 lime (zested and juiced)
- 1 pinch sea salt
Directions
Whisk together the olive oil, onion, cilantro, lime zest and juice and a pinch of sea salt in a bowl. Set aside.
Season the salmon with 1/2 teaspoon sea salt and pepper. In a heavy-bottomed skillet on medium-high heat, heat the coconut oil. Sear the salmon for 1-2 minutes on each side.
Place the salmon on plates and top with avocado slices and lime dressing. Garnish with cherry tomatoes and cilantro.
