Dairy-Free Creamed Kale

Dairy-Free Creamed KaleCreamy cashews coupled with nutritional yeast are delicious substitutions for dairy in this dairy-free creamed kale recipe.

Serves: 12

Prep time: 10 minutes

Cook time: 15 minutes

Allergy: Tree nuts

Ingredients

  • 1 bunch kale (finely chopped)
  • 2-3 tablespoons ghee or coconut oil
  • 1 medium onion (small dice)
  • 4 cloves garlic (minced)
  • 1/2 cup raw cashews (soaked overnight, rinsed and drained)
  • 2 cups water or homemade chicken broth or vegetable broth
  • 1 tablespoon lemon juice (freshly squeezed)
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon Herbamare
  • 1 small lemon (zested)

Directions

Heat a large skillet over medium heat. Add the oil, then the onions and garlic. Saute’ for about 5 minutes or until soft. Add them to a blender along with all other ingredients except for the kale. Blend until smooth and creamy.

Place the sauce and chopped kale back into the skillet and simmer for 10-15 minutes, or until kale has softened and sauce has thickened. Taste dairy-free creamed kale and season with sea salt and pepper.

ALZHEIMER’S IS TYPE 3 DIABETES

Alzheimer’s is type 3 diabetes.  “Alzheimer’s is a process by which excess amyloid plaque builds up in the brain, compromising brain function.

While many theories exist as to why the plaque accumulates, one common theory is that it is due to a lack of a protein called insulin-degrading enzyme.

This protein’s job is to remove excess sugar-carrying insulin and amyloid plaque from the brain.

If this enzyme is too busy removing insulin and excess sugar from the brain due to high blood sugar levels, there may not be enough to also remove excess plaque, thereby significantly increasing the risk of Alzheimer’s.”

Arugula Salad with Fennel and Orange

Arugula Salad with Fennel and OrangeFennel and orange combine with apple cider vinegar to make this delicious arugula salad. I use toasted nuts for depth of flavor.

Serves:  4

Prep time:  15 minutes

Cook time:  5 minutes

Ingredients

  • 3 oranges
  • 1 lemon (juiced)
  • 1 tablespoon raw apple cider vinegar
  • 1 tablespoon extra-virgin olive oil
  • 1/2 teaspoon sea salt
  • 1 fennel bulb (thinly sliced)
  • 16 mushrooms (thinly sliced)
  • 1 red onion (thinly sliced)
  • 6oz arugula or spinach
  • 1/2 cup pecans or other nuts, crumbled and toasted

Directions

Supreme 2 oranges. Juice the other one and mix with lemon juice, vinegar, olive oil and sea salt.

Mix fennel, mushrooms, onion and spinach in a large bowl. Toss with vinaigrette. Put arugula salad on individual serving plates and top with nuts.
